Beware of Histamine Food Poisoning

Improper storage of red-fleshed fish such as Pacific saury (sanma) and mackerel (saba), or products made from these fish, can cause histamine to form when bacteria break down amino acids in the fish. Eating fish containing high levels of histamine may cause symptoms such as facial flushing and hives. Histamine cannot be removed by cooking or reheating.

To help prevent food poisoning:

  • Keep fish refrigerated and do not leave it out at room temperature.
  • Consume fish as soon as possible after purchase. (Histamine may still be produced even when fish is stored in a refrigerator for a long period of time.)
  • Do not eat fish that has lost its freshness.
